This is a traditional recipe for oyster dressing.


16 cups herb stuffing mix (okay to substitute cubed, stale bread)
3 pints oysters with juice
1 cup green onions, chopped
1/2 cup onion, diced
1 cup green bell pepper, diced
1/2 cup celery, diced
2 cloves garlic, minced
1 cup Parmesan cheese
2 Tbsp. butter
1/2 cup water
1 tsp. dried parsley
1 tsp. dried thyme
1 tsp. oregano


  1. Melt butter over medium heat. Saute onion, pepper, celery, and garlic until tender. (do not burn garlic)
  2. Add bread, water, spices, and oysters.
  3. Cook & stir constantly until oysters are done (5-10 minutes).
  4. Mix in scallions and cheese.
  5. Bake uncovered in a 13×9 baking dish. 30 minute hours at 350°.
