A classic lobster bisque recipe.


2 lbs. cooked lobsters
2 cups vegetable stock
4 Tbsp. butter
1 Tbsp. tomato paste
1 onion, diced
1 bay leaf
1 carrot, diced
1 tsp. thyme
1 clove garlic, diced
1/4 cup brandy
1 celery stalk, diced
2 cups heavy cream
2 Tbsp. flour
1/4 tsp. paprika
1/2 cup sherry
salt and pepper to taste


  1. Remove lobster meat and chill. In a skillet, saute garlic and vegetables in butter for 2-3 minutes.
  2. Remove the vegetables and add sherry to the pan to capture the aroma of the mixture.
  3. In a large pan, simmer spices, vegetable stock, vegetables, brandy, tomato paste, lobster meat.
  4. Add the brandy mix, and slowly stir in flour to thicken soup.
  5. Simmer just until the soup is thickened and comes to a boil.
