Fresh squid is easy to clean and prepare for making calamari dishes. The following article highlights how to clean fresh squid for table use.
Step 1. Remove the head and gut by pulling gently while holding the mantle (body).
Step 2. Remove quill from mantle.
Step 3. Remove skin from mantle by peeling gently. Remove fins and skin if desired.
Step 4. Cut tentacles just below eyes. Remove beak. Discard head.
Step 5. Rinse mantle and tentacles well and drain
Step 6. Cut mantle into rings and tentacles into short pieces.
