Cleaning and Filleting Mahi Mahi

This tutorial explains how to clean and fillet mahi mahi (dolphinfish).

 

Step 1. Cut behind the gill and slice back along the spine to the tail.

 

 

Step 2. Inspect the fillets and trim rib bones out with a sharp knife.

 

 

Step 3. Place fillets face down and slice just under the skin, separating the flesh from the skin.

Rinse, chill and store the fillets on ice immediately.
