Grilled Orange Roughy

Prep Time: 10 minutes
Cook Time: until fish flakes

Ingredients:
1 1/2 lbs. fresh orange roughy fillets
1 to 2 tablespoons lemon juice
fresh parsley
lemon pepper and sea salt to taste

Instructions:
Rinse fish; pat dry. Cut into small serving pieces if necessary.

Place fillets on thin layer of foil. Tuck under any thin edges to make even thickness.

Sprinkle salt and lemon pepper. Grill until fish flakes easily when tested with a fork. Sprinkle with parsley and serve over rice with favorite vegetables as side.
