| Broiled Orange Roughy with Butter Glaze

| Ingredients: 1 1/2 lbs fresh orange roughy fillets 1/4 stick melted butter 2 tbsp. lemon juice salt and black pepper fresh parsley lemon pepper found at http://www.fresh-seafood.net/ |

| Instructions: Rinse fish; pat dry. Cut into small serving pieces if necessary. Place fillets on the greased rack of an unseated broiler pan. Tuck under any thin edges to make even thickness. Combine butter and lemon juice and brush over fillets. Sprinkle salt, black pepper, and lemon pepper. Broil fillets 4-inches from heat for 4 to 6 minutes per 1/2-inch of thickness, or until fish flakes easily when tested with a fork, while brushing occasionally with lemon butter mixture. Sprinkle with parsley and serve over rice with favorite vegetables as side. |
