Sea Bass Seviche

an easy seviche recipe using fresh sea bass

Servings: 3
Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients:
1 lb sea bass fillets
1 medium tomato
1 medium onion
2 jalepeno peppers
1/2 tsp. minced garlic
1/4 cup cilantro
1 lemon
sea salt to taste

Prep Notes:
Freeze fillets for 24 hours prior to preparing. You may cut the fillets into small pieces while still partly frozen.
Instructions:
Cut fillets into small pieces.

Chop vegetables and cilantro.

Mix the fish, vegetables and spices, squeeze lemon onto the mix and chill for 30 minutes.

Serve with a favorite cheese, crackers or bread and white wine.



A delicious variation on this is to marinate the fish chunks for 30 minutes or more in the mix, then remove the fish only and broil them a few minutes.



Allow the broiled fish to cool, then add back into the seviche.
