| Ingredients: 1 1/2 - 2 pounds tilapia fillets salt and pepper to taste 3 large tomatoes, peeled, seeded, and chopped 1/2 cup finely chopped green pepper 1/2 cup finely chopped onion 6 tablespoons butter 3 tablespoons lemon juice 1/8 teaspoon Tabasco found at http://www.fresh-seafood.net/ |

| Instructions: Preheat oven to 400°. Butter a shallow baking dish large enough to hold the fish in one layer, and place fish in it. Season with salt and pepper to taste and spread the tomatoes, green pepper, and onion over the top. Melt the butter with lemon juice and Tabasco and drizzle it over the fish and vegetables. Bake about 25 minutes, basting with pan juices every 10 minutes. |
