Halibut with Cheese Sauce

Halibut with Cheese Sauce

Servings: 4
Prep Time: 10 minutes
Cook Time: 25 minutes

Ingredients:
1 1/2 lbs. halibut steak
Onion, sliced
2 bay leaves, broken into pieces
4 tablespoons butter
4 tablespoons flour
2 cups milk
1 1/2 cups grated cheddar cheese
Freshly ground pepper
Salt
1 cup freshly made buttered bread crumbs

Instructions:
Preheat the oven to 350°. Put the halibut steaks in a steamer and cover with the onion slices and bay leaves. Cover and steam 5 minutes. Meanwhile, melt the butter in a saucepan. Add the flour and blend until smooth. Slowly add the milk and stir over medium heat until smooth and thickened. Add the cheese and cook until melted. Add pepper and salt to taste. Cut the halibut into bite-sized pieces, remove any bones, and place fish in a shallow, buttered casserole. Spoon the cheese sauce evenly over the halibut. Sprinkle with the bread crumbs and bake for 25 minutes.
