Tilapia with Coconut Sauce

Broiled tilapia with served with a coconut-lime sauce

Servings: 4
Prep Time: 10 minutes
Cook Time: 8-10 minutes

Ingredients:
Coconut Sauce:
2 green onions
1 cup coconut milk
2 strips lemon peel
1 clove garlic, finely chopped
1 small fresh jalapeņo pepper, seeded and chopped
1 canned anchovy, chopped
1 tsp. corn starch
1/4 tsp. salt

Entree:
1 lb tilapia fillets
2 teaspoons lime juice
2 teaspoons soy sauce
1/8 cup chopped cilantro

Instructions:
Prepare sauce:



Slice 1 green onion top and reserve. Slice remaining white part and other green onion and place in small saucepan. Stir in coconut milk, lemon peel, garlic, jalapeņo, anchovy, cornstarch, and salt until well combined.

Bring to boiling while stirring. simmer 5 minutes. Cover and let stand while cooking fish.

Preheat broiler.

Place fish on broiler-pan rack sprayed with nonstick cooking spray.

Combine lime juice and soy sauce in small dish.

Broil 5 inches from heat for 8 to 10 minutes or until cooked through, turning over halfway through cooking and brushing with soy mixture.

Strain sauce into a serving dish. Stir in cilantro and reserved sliced green onion top. Serve with broiled fish.
