| Ingredients: 1 4- to 5- pound fresh or frozen dressed salmon 2 cups water 1 stalk celery, cut up 1 slice lemon 1 slice onion 1 bay leaf 1 teaspoon salt found at http://www.fresh-seafood.net/ |

| Instructions: Thaw fish, if frozen; wrap salmon in cheesecloth. 2Place wrapped fish on rack of pan. Add water, celery, lemon, onion, bay leaf, and salt. Cover and simmer for 25 to 30 minutes. Fish is done when it flakes easily when tested with a fork. Remove salmon from pack; wrap in foil to keep warm. Pull foil and cloth away from fish; carefully remove skin. Discard skin. Transfer fish to serving platter using two large spatulas. Sprinkle with dried dill weed, if desired. |
