| Baked Fish with and orange-lemon sauce

| Ingredients: 2 lbs. fresh or frozen halibut steaks or other white fish 1/2 cup finely chopped onion 2 cloves garlic, minced 2 tbsp. cooking oil 2 tbsp. chopped parsley 1/2 cup orange juice 1 tbsp. lemon juice found at http://www.fresh-seafood.net/ |

| Instructions: Thaw fish if frozen. Arrange in a 12 x 7 1/2 x 2-inch baking dish. Cook onion and garlic in oil until onion is tender, but not brown. Stir in parsley, 1 teaspoon salt, and 1/8 teaspoon pepper. Spread mixture over fish. Combine orange and lemon juices; pour evenly over all. Bake, covered, in a 400° oven for 20 to 25 minutes or until fish flakes easily with a fork. If desired, arrange hard-cooked egg wedges on top of the fish, sprinkle with paprika, and garnish with orange slices. |
