| Ingredients: 1 tbsp. peanut oil or olive oil 1/4 cup lime juice 1 tbsp. chili sauce 1 teaspoon sugar 1 cucumber (about 8 ounces), pared, halved lengthwise, seeded and sliced 1/4 inch thick 1 lb. large shrimp (21 to 25 per pound), peeled and deveined 1/8 teaspoon ground hot red pepper 1/3 cup flaked coconut 1/4 cup shelled roasted peanuts found at http://www.fresh-seafood.net/ |

| Instructions: Whisk together 1 tablespoon oil, 2 tablespoons lime juice, chili sauce and 1/2 teaspoon sugar in small bowl. Heat remaining tablespoon oil in large skillet over moderately high heat. Add cucumber; cook, stirring occasionally, for 4 minutes. Remove with slotted spoon to serving bowl. Add shrimp to skillet; cook, stirring frequently, for 3 minutes or until almost done. Add remaining lime juice, sugar and the hot red pepper. Cook one minute. Stir in coconut, peanuts and reserved chili sauce mixture. Toss in cucumbers; cook 1 minute. Serve. |
