Oyster - Oriental Noodle Soup

oysters, oriental style rice noodles and vegatables

Ingredients:
1 pint oysters with liquor
2 handfuls uncooked oriental style rice noodles
1 cup fresh sweet vegetables or frozen mixed vegetables
1/4 cup butter
salt and pepper to taste

Prep Notes:
This is a highly recommended soup that's fast and good.



Use any combination of fresh carrots, string beans, peas, celery and corn if available, or use frozen mixed vegetables.
Instructions:
Drain oysters and save the liquor.



In a large saucepan, simmer chicken stock, oyster liquor, noodles and vegetables. Cook just until noodles are tender, about 5 mins. This can be simmering while the oysters are cooked.



In a small frying pan, melt butter and add oysters, cooking just until the edges curl. Salt and pepper when the oysters are near done.



Add the oysters to the soup and simmer 5 additional minutes.



Serve with saltines or other crackers.
