| Ingredients: 3 tbsp. butter or olive oil 1/2 lb country ham, or fresh ham, cubed or diced 1 pint oysters with liqour 2 cups water 2 cups white cornmeal salt and pepper to taste found at http://www.fresh-seafood.net/ |

| Instructions: Saute ham until edges are brown; set aside. Remove any shell from oysters, drain and save the oyster liquor. Chop oysters and simmer in a skillet with a little olive oil and oyster liquor. Cook 2-3 minutes or until the edges of oysters curl some. Add ham, water, salt and pepper. Slowly add in cornmeal and stir, simmer until slightly thickened. Serve with rolls, biscuits or bread. |
