Drum Parmesean

a twist on a classic Italian recipe

Ingredients:
2 lbs. black or red drum
2 sliced bacon, cut in small pieces
2 tbsp. parsley, diced
3 tbsp. olive oil
1/2 cup breadcrumbs
3 tbsp. parmesean cheese, grated
1/4 lemon, squeezed
salt and pepper to taste

Instructions:
Preheat oven to 350 degrees. Cut steaks into serving size or smaller pieces. Coat each steak with olive oil, salt and pepper.

Roll steaks in a mix of breadcrumbs and parmesean.

Place steaks in a baking dish and cover with bacon slices and sprinkle with lemon juice. Bake until flaky, usually 10-15 minutes. Serve with lemon wedges.
