Steamed Shrimp with Garlic & Ginger

A Chinese steamed shrimp recipe

Servings: 4

Ingredients:
2-1/4 lb jumbo shrimp
1 Tablespoon finely chopped fresh ginger
1 Tablespoon finely chopped garlic
3 Tablespoons oil
1 large finely chopped scallion

Sauce

3 Tablespoons light chicken broth
1-1/2 Tablespoons light soy sauce
1/2-1 Tablespoon sugar
1-1/2 Tablespoons oyster sauce pinch of ground pepper
1-1/2 Tablespoons rice wine

Instructions:
1. Use sharp scissors to trim off the shrimps' antennae and legs.Cut neatly down the center of their backs and extract the black thread-like vein.



2. Place the prepared shrimp in a heat-proof dish and steam in the the Royal Chinese Wok,

sprinkle with garlic, ginger and oil. Cover wok and steam for 3-4 minutes.



3. Mix all the sauce ingredients in a small saucepan and stir over fairly high heat until the volume is reduced by half. Transfer the cooked shrimp to a serving platter, pour the sauce all over them, and sprinkle it with the finely chopped scallion.
