Chinese Deep-fried Shrimp

an oriental fried shrimp recipe

Servings: 4
Prep Time: 10
Cook Time: 10

Ingredients:
1 lb. large or medium shrimp

(a) 1 Tbsp. wine
1/2 tsp. salt
dash of pepper
6 Tbsp. flour
Oil for deep-frying

Soft batter:
1 beaten egg
4/5 cup ice water
1 cup flour

OR

Crispy flour paste
1 cup ice water
1 cup flour
1/3 teaspoon baking powder
1 Tablespoon oil

Instructions:
1.Shell the whole shrimp except the tail. Remove the black thread-like vein. Make three cuts from the belly to the back, do not cut through but stop half way so that shrimp will not curl when frying. Add ingrediants (a) and marinate briefly.



2.Stir and mix the batter or flour paste well.



3. Heat oil the Royal Chinese Wok to medium hot(about 350 F). Hold each shrimp by tail then dip in batter; deep-fry for 2 minutes until golden brown.



Remove and lay out shrimp on a paper towel to drain excess oil. Serve with a dipping sauce.



Note: For best results, keep the the temperature of deep-frying oil at 350 F. When cooking shrimp, should the temperature fall, increase heat until it reaches 350 F then reduce heat to maintain temperature.
