Fillets of Sole (Chinese)

A Chinese flounder or sole recipe

Servings: 2

Cook Time: 10

Ingredients:
1. Cut the fish fillets into strips and season with salt and pepper. Mix (a) and add the fillets, making sure they are all well coated; leave to stand for a few minutes. Steam the jujubes for 5 minutes.

2. Drain excess marinade from fish. Chop jujube finely. Place a little of the chopped jujube on each fish strip, roll up firmly, dip in the stiffly beaten egg whites, and then coat with cornflour.

3. Heat the oil in the Royal Chinese Wok and deep-fry the rolls a few at a time until golden brown. They can also be shallow-fried.
Serve hot.

10 oz fillets of sole or flounder

7 oz jujubes

2 egg whites

1/2 cup cornflour

oil for deep-frying



(a) 1-1/2 Tablespoons rice wine

generous pinch freshly ground pepper

pinch of salt
