Grilled Rockfish with Vegetables

| Ingredients: 1 lb striped bass fillets 1/4 cup sliced mushrooms 1/4 cup tomatos 1 cup crabmeat 1/4 cup white wine 2 tsp. heavy cream found at http://www.fresh-seafood.net/ |

| Instructions: Just salt and pepper the fish, nothing else, put on grill after spraying it real well with Pam. Cook on both sides with lid on. Sauce for Rock: Take a little diced onion, saute until clear, add a little chopped garlic, then add diced tomatoes, or if you don't have any good ripe ones, canned diced tomatoes will do in a pinch, (it's better than the "red" tomatoes you get at the store that look like tomatoes, but don't taste like them) ok, add some sliced mushrooms, crabmeat, (use claw, it's cheaper, sweeter, and very little shell) some white wine, a little heavy cream, simmer for about 15 minutes so some of the liquid evaporates, then season with salt, pepper, Old Bay, and at the last minute some very thinly shredded fresh basil. Put the Rock on the plate and spoon sauce over, serve with some rice with some summer vegatables diced up in it. Pick up a bottle of Pinot Grigio to go with it. It's very light, inexpensive and a real good summer wine. |
