Shrimp Quesadillas

| Quesadillas with shrimp or prawns

| Ingredients: 4 flour tortillas 8 oz. steamed or boiled shrimp (peeled) 8 oz. cheese (Mexican melting cheese, Monterey jack, cheddar or American) butter or olive oil 2 jalapeņo peppers or 1 avocado (optional) 1 tablespoon chopped cilantro salt and pepper to taste found at http://www.fresh-seafood.net/ |

| Instructions: 1. Split cooked shrimp lengthwise and de-vein if necessary. Slice cheese and any optional ingredients into small thin pieces. 2. Heat a skillet, adding just enough butter or olive oil to prevent tortillas from sticking. 3. In the heated skillet, add 1 tortilla, then position shrimp, cheese, (optional) peppers or avocado slices and sprinkle with chopped cilantro. Cover with second tortilla. 4. Cook until bottom tortilla begins to brown. Carefully flip and brown remaining side. 5. Remove from pan and cut into 4 sections. Serve immediately. |
