Farmer's Market Haddock and Baked Vegetables

Fresh Haddock and Vegetables

Servings: 3
Prep Time: 15
Cook Time: 20-30 minutes

Ingredients:
1 pound fresh local haddock fillets or other white fish, cut into 2" x 2" squares
2 cups whole baby or redskin potatoes
2 carrots, peeled and cut into pieces
2 cups chicken or fish stock
3-4 bay leaves
1 tablespoon fresh oregano, chopped
salt and pepper to taste

Instructions:
1. Coat the inside of a suitable casserole dish with olive oil.

2. Add fish, potatoes, carrots and stock. Add just enough that stock to partially covers the fish.

3. Sprinkle with herbs, salt and pepper.

4. Bake @ 350 degrees, covered until fish is flaky and vegetables are just tender (20-30 minutes).
