| Ingredients: I kg cod, whiting and haddock, mixed 1 small eel, cleaned 2 litres water or fish stock 2 large onions, thinly sliced 2 young sticks of celery 2 small carrots, peeled and sliced 4 tablespoons of freshly chopped mixed herbs 1 hay leaf 2 bruised parsley stalks 6 peppercorns 8 tablespoons of dry white wine 1 and a half teaspoons of salt lemon rings for garnishing found at http://www.fresh-seafood.net/ |

| Instructions: Wash the fish and cut into chunks. Place in a large saucepan with the stock, vegetables, herbs, salt and peppercorns. Bring everything to the boil then reduce the heat and simmer for two hours. Remove from the heat and take out the bay leaf. Sieve or liquidize the soup, return to the saucepan and add the white wine. Heat through and serve with the lemon rings. Suggestion: Add a spoonful of sour cream to each bowl of soup before serving to enrich the flavour. source: http://www.fishingheaven.co.uk |
