Red Snapper with Pesto

Snapper or other fish coated Italian pesto sauce

Servings: 3
Prep Time: 5 minutes
Cook Time: 12-15 minutes

Ingredients:
(3) red snapper or other white fish fillets; 3/4 - 1 lb. each.
2 Tbsp olive oil
1 Tbsp fresh lemon juice
3 Tbsp Italian pesto sauce

Instructions:
Combine olive oil and pesto and coat fillets.

Lay fillets in a greased baking dish.

Bake about 8 minutes @ 375 degrees, then sprinkle with lemon juice and bake for 4 minutes or until flaky.
