Smoked Salmon Quesadillas

Smoked salmon quesadillas with avocado salsa

Servings: 2
Prep Time: 20
Cook Time: 10

Ingredients:
(4) 12-inch flour tortillas
1 1/2 cups shredded Monterey Jack Cheese
3 oz. cream cheese
6 oz. smoked salmon
1 tbsp. vegetable oil or spray
1/4 cup sour cream

Avocado Salsa:
1 large ripe avocado, peeled and diced
2 green onions, chopped
1/4 cup green tomatillo sauce
1 tsp. Habanerro pepper (spicy!) or jalapeno pepper (mild)
1/2 tsp. salt
1/4 tsp garlic powder

Instructions:
Heat large skillet or flat griddle and brush with vegetable oil or spray.

Spread tortillas with softened cream cheese or herb cheese. Place on heated griddle with spread side up.

Top Tortillas with Monterey Jack cheese and smoked salmon. When cheese begins to melt, fold over each tortilla in half and remove to warm serving platter.

Mix all Avocado Salsa ingredients together and chill.

Serve with salsa and lime wedges. Top with sour cream.
