Grilled Shrimp and Dill Canape's

Shrimp canape's

Servings: 6
Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients:
1/4 cup vegetable oil
1 tablespoon Florida lemon juice
1/2 teaspoon salt
1 lb Florida shrimp, peeled and deveined
1/2 cup mayonnaise
1/4 cup Florida red onion, chopped
3 tbsp. fresh Florida dill, chopped
2 tbsp. deli-style mustard
1 tbsp. Worcestershire sauce
1 jalapeno pepper, chopped fine
24 party slices rye or pumpernickel bread, toasted

Instructions:
Combine oil, lemon juice and salt; mix well.

Baste shrimp with oil mixture and place in well-greased, hinged wire grills, 6 to 8 inches over medium coals.

Cook 3 to 4 minutes; baste with oil mixture.

Turn and cook 4 to 5 minutes longer.

Remove shrimp from grill and chop fine.

Combine shrimp with mayonnaise, onion, dill, mustard, Worcestershire sauce and jalapeno pepper.

To assemble canapés, spread equal amount of the shrimp spread on top of each slice of bread.

Yield: 24 canapes.
