Pompano With Summer Vegetables

pompano with fresh vegetables and a Mexican style sauce

Servings: 2
Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients:
2 large or 4 small pompano, cleaned and rinsed.
1 cup of peanut oil
1 onion (chopped)
1 fresh jalapeno pepper
1 fresh red bell pepper
1 clove of garlic (crushed)
1 tbsp. cumin
1 tbsp. chili powder
1 cup tomato sauce
1 tsp.black pepper
salt to taste

Instructions:
Heat the oil and fry the fish whole, cooking each side until lightly browned.

Remove the fish and simmer the vegetables for 2-3 minutes until tender.

Drain off all but 1 tablespoon of oil and add cumin, chili powder, tomato sauce, salt and pepper and simmer.

Place vegetables on plate, add fish and pour sauce over the fish.
