Italian Pasta Salad with Surimi Crab

a very simple and delicious pasta salad with Surimi crab

Servings: 6
Prep Time: 30 mins
Cook Time: 10 mins

Ingredients:
Salad

16 oz Surimi crab, sliced into bite sized portions
16 oz. fresh or smoked mozzarella cheese, diced into small pieces
18 plum or 12 Roma tomatos, chopped
1/2 medium red onion
1 small bell pepper, chopped
6 large calamata olives, pitted and chopped
20 chopped basil leaves
16 oz. bow tie pasta, cooked, rinsed and drained
8 fresh white button mushrooms

Dressing

1 tsp. garlic salt
1 tsp. fresh oregano
2 tsp. tomato paste
2 tbsp. red wine vinegar
1/3 cup extra virgin olive oil
fresh ground black pepper to taste

Cook the pasta according to package directions, rinse with cold water and drain. Combine pasta and other salad ingredients in a large bowl. Wisk first four ingredients of dressing together in a small bowl, then wisk in oil slowly. Pour dressing over salad and toss. Add in black pepper to taste.

Instructions:

Saute Surimi crab sections with a small amount of olive oil just until warm.

Combine pasta, Surimi crab and other salad ingredients in a large bowl.

Wisk first four ingredients of dressing together in a small bowl, then wisk in oil slowly. Pour dressing over salad and toss.

Add in black pepper to taste.
