| a Chespeake Bay fish cake recipe using striped bass or "rockfish"

| Ingredients: 1 lb Striped Bass fillets 2 eggs 2 tbsp. mayo 1/2 tsp. yellow mustard 1/4 cup finely chopped celery 1/4 cup chopped onion 1 cup Italian bread crumbs Old Bay seasoning to taste found at http://www.fresh-seafood.net/ |

| Instructions: Cut the fillets up into 1 x 1 inch sections. In a frying pan add water and old bay seasoning. Simmer 5 minutes, remove fish with a strainer, rinse and drain. Allow fish to cool before mixing. Combine mayo, mustard, fish, eggs, celery, and onion together and mix well. Slowly add Italian bread crumbs and form into cakes about the size of a hamburger or crab cake. At this point the fish cakes can be fried or broiled until brown, or frozen for later use. When frying, cook on each side until they are brown all over 3 to 5 minutes in hot oil. Fish cakes may also be broiled about 2-3 minutes on each side, until lightly brown. Serve with potato hamburger buns. Alternate method: Buy a package of Old Bay Crab Cake Seasoning and follow the directions on the back, using boiled and crumbled striper instead of crab meat. |
