Grilled Salmon with Vegetables

salmon, grilled and served with sun dried tomatos, onions and herbs

Servings: 3
Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients:
1 lb salmon fillets
1/4 cup olive oil
1/2 cup sun dried tomatoes
1/2 cup diced onions
1/4 cup fresh cilantro
1 cup thin sliced potatoes
1/2 red bell pepper
1 clove garlic-crushed (optional)
lemon slices
salt and pepper to taste

Instructions:
Slice peppers, onion and potatoes. Mix in a bowl with whole sun dried tomatoes,garlic and olive oil.

Place vegetables on a hot grill.

Dredge the salmon fillets thru the remaining olive oil-spices mix and grill 3-5 minutes per side.

Serve hot with grilled vegetables, adding uncooked cilantro on top. Serve with lemon wedges and your favorite mayo or other seafood sauce.
