| a Chespeake Bay soft crab with melted cheese

| Ingredients: 6 soft shelled blue crabs House Autrey Seafood Breader Mix or equivalent salt and pepper to taste 6 slices provolone cheese 2 large tomatoes, sliced thin 1/4 cup peanut oil found at http://www.fresh-seafood.net/ |

| Instructions: Preheat broiler. Shake crabs and breader mix in a plastic bag. Saute soft crabs in peanut oil with high heat until brown. Place crabs in groups of 2 on a broiler pan, and add cheese, then 2 slices of tomato on each pair. Broil just until the cheese melts and the tomatoes bubble. Using a spatula, lay pairs of crabs on toasted rye bread, pumpernickel or Italian rolls. |
