|a nice seviche recipe
2 lbs. flounder fillets
1/2 cup chopped onions
8 oz. chopped green chile or jalepeno peppers
1/2 tsp. fresh chopped oregano
1/4 cup fresh chopped cilantro
2 cups fresh lime juice
2 large diced tomatoes
sea salt and pepper to taste

Cut fish into 1/2 inch cubes and arrange in a single layer in a glass dish.
Add remaining ingredients except cilantro.
Stir well. Cover and chill for 6 hours, or until fish turns completely white.
Serve in the marinade garnished with cilantro.
