This recipe makes a complete dinner, perfect for a cold winter night.
1 pound fresh local haddock fillets or other white fish, cut into 2″ x 2″ squares
2 cups whole baby or redskin potatoes
2 carrots, peeled and cut into pieces
2 cups chicken or fish stock
3-4 bay leaves
1 tablespoon oregano, chopped
salt and pepper to taste
1. Coat the inside of a suitable casserole dish with olive oil.
2. Add fish, potatoes, carrots and stock. Add just enough stock to partially cover the fish.
3. Sprinkle with herbs, salt, and pepper.
4. Bake @ 350 degrees, covered until fish is flaky and vegetables are just tender (20-30 minutes).
